Located near the Hiroshima Electric Railway Minami-kuyakusho-mae streetcar stop. Seafood and Fugu Cuisine Fukufuku is located in Minamimachi, Minami Ward, and you can enjoy fresh fugu cuisine all year round. Our restaurant sources fish from all over Japan, mainly tiger pufferfish from Nagasaki Prefecture, and uses the most suitable fugu for the season.We maintain them with care to serve the highest quality fugu.
Another of Fukufuku's specialties is eel. We source live eels from Aichi Prefecture and keep them in a fish-tank on the premises, so we can serve the very freshest eel dishes. Our restaurant's eel is prepared Kansai-style, grilled with soy sauce. The crispy texture of the skin and its fragrant aroma are combined with a captivating deliciousness.
The flavor of fugu differs greatly depending on how it is treated. Our restaurant emphasizes 3 points: preparation, cleaning, and curing. During preparation, the fish are killed in cold water, cleaning removes any excess, and curing enhances the tenderness and flavor of the meat. Long years of experience as an artisan are of the utmost importance to ensure that each type of pufferfish is treated in the appropriate way. Pufferfish are also extremely delicate creatures, so one must not forget to maintain the fish tank diligently. Through careful attention to details and management, we bring out the deliciousness of fugu to the fullest.

Born in Hiroshima in 1973. He trained in Osaka for 23 years to polish skills. He learned how to handle pufferfish while studying Japanese cookery. While gaining experience, he resolved to find out how his own cooking would be received. He opened Fukufuku in December 2018.

Tecchiri

Tecchiri is a classic way of preparing fugu. At Fukufuku, you can enjoy it with a dashi broth painstakingly prepared from kombu kelp and dried bonito flakes. Savor thickly sliced fugu and vegetables simmered in dashi broth carefully made from aged kombu kelp topped with our homemade ponzu sauce. This masterpiece combines the texture of fugu with the savoriness of dashi broth, accented with the sourness of ponzu sauce. Our savory rice porridge is packed with concentrated flavors so delicious you cannot help smiling.
Our ponzu sauce is homemade
The juice of Yuzu and sudachi citrus fruits and dark soy sauce are added to shiitake mushrooms and kombu kelp, and then it is allowed to mature for 2 weeks. Over this time, the sauce thickens, and the flavors blend together. The fugu blends with the refreshing acidity and the flavor of dashi broth, further enhancing the savory taste.
